Luis Rodriguez's "Escolma"—meaning selection—represents the pinnacle of his quest to resurrect Ribeiro's nearly extinct native grapes. Made only in exceptional years from old-vine Treixadura grown on granite terraces near Arnoia, these ultra-low-yielding vines produce just one kilo per plant. Fermented in new and semi-new oak barrels and aged on lees for a year, the 2019 was released four years after harvest, developing magnificent complexity. Profound, age-worthy Galician white wine.
