Laurence Ployez, a third-generation winemaker, crafts this Champagne exclusively from Chardonnay of Premier and Grand Cru vineyards in the Montagne de Reims' chalk-rich slopes. Only first-pressed juice enters her wines, and she maintains very little reserve wine to preserve the character of each vintage. Aged a minimum of six years, this Extra Quality Brut's very low sugar content showcases the purity of chalk-influenced fruit—elegant and complex.
