Vin Jaune—the legendary 'yellow wine' of the Jura, aged under a veil of yeast for approximately seven years. Michel Gahier's family has been in Montigny-lès-Arsures since 1525. He took over in 1990 and converted to organic/biodynamic farming (certified Nature & Progrès since 2014). 100% Savagnin, raised 'sous voile' in old oak barrels: a thin layer of yeast protects the wine while allowing controlled oxidation that develops extraordinary nutty, spicy, saline complexity. The 620ml clavelin bottle is traditional—one liter yields exactly 620ml after years of evaporation. Michel recommends twenty years of additional bottle age.
