Grower Champagne from Benoît Marguet, fifth-generation vigneron in Ambonnay—one of the Montagne de Reims' finest Grand Cru villages for Pinot Noir. Biodynamic since 2009 (Demeter certified), Benoît ploughs with horses, harvests by hand, ferments in oak with native yeasts, and adds zero dosage (Brut Nature), with minimal added sulfur. The Shaman cuvée is roughly two-thirds Pinot Noir and one-third Chardonnay from Grand Cru parcels. Everything here is the antithesis of industrial Champagne: living wine from a farmer who controls every step.
