Aurélien Laherte is at the forefront of Champagne’s grower-producer movement, crafting terroir-driven wines with an emphasis on biodiversity and minimal intervention. Based in Chavot, in the Côteaux Sud d’Épernay, the estate follows organic and biodynamic principles across its 10 hectares of vineyards. Les 7 is one of Laherte’s most distinctive bottlings—an homage to Champagne’s historical grape varieties. A field blend of all seven authorized grapes—Chardonnay, Pinot Noir, Meunier, Pinot Blanc, Arbanne, Petit Meslier, and Fromenteau (Pinot Gris)—this cuvée is sourced from a single parcel of massal-selected vines planted in 2003. Fermented with native yeasts and vinified in neutral oak, it is bottled with a low dosage to preserve its purity and energy.
