Northern Rhône Syrah from historic granite and schist slopes—hand-harvested and whole-cluster fermented at low temperatures with indigenous yeasts. Hervé Souhaut, a former chemist turned minimal-intervention winemaker, coaxes silky tannins and crystalline finesse from this south-facing terroir, aging eight months on fine lees in neutral barrels. Dark red fruits, floral rose and violet notes, subtle bacon fat and peppery spice define the nose; velvety texture and fresh herbs on the palate. Bottled unfined and unfiltered with minimal sulfites.
