For nearly a thousand years, nuns have made wine within the ancient walls of Convento San Lorenzo, and this Sforzato carries their legacy forward. "Sforzato" honors an ancient practice: Nebbiolo grapes harvested from the highest vineyard at 600 meters are air-dried until January before fermentation, concentrating their power and complexity. The 2019 Ventum is an intense, enveloping wine with aromas of ripe and preserved red fruit, cinnamon, and liquorice, finishing with warmth and structure. Aged 15 months in barrel, this 100% Nebbiolo bridges medieval tradition and modern winemaking.
