Mezcal is legally required to be distilled (at least) two times. But for ceremonial occasions like a wedding mezcaleros often produce a Pechuga, which is commonly distilled three times. Pechuga literally means chest.. and that is one of the most commonly added ingredients: chicken breast or pheasant. Besides meat the mezcaleros also add a mix of fruits and often herbs, grains and/or nuts.
Aromas of fresh spices: pepper, clover, and bit of nutmeg. More aromas of roasted chicken and sweet cream. The palate has notes of chicken fat, fried soy, smoked salmon, raisins, and raw pumpkin.
