A boldly bitter Italian aperitivo from one of Italy's oldest distilleries, founded in 1814 near Modena in Emilia-Romagna. Multiple generations of the Casoni family have refined this formula: an infusion of gentian, cinchona (quinine), bitter and sweet orange, mugwort, rhubarb, mint, and licorice, cold-extracted over the course of a month to preserve delicate aromatics. At 23% ABV, Il Bitter is more assertive than many competitors—it stands up in a Negroni without getting lost behind the gin and vermouth.
